Freshwater prawn farming shares many characteristics with, and many of the same problems as, marine shrimp farming. Unique problems are introduced by the developmental life cycle of the main species (the giant river prawn, Macrobrachium rosenbergii). All farmed freshwater prawns today belong to the genus Macrobrachium. Until 2000, the only species farmed was the Giant river prawn (Macrobrachium rosenbergii, also known as the Malaysian prawn). Since then, China has begun farming the Oriental river prawn (M. nipponense) in large quantities, and India farms a small amount of monsoon river prawn (M. malcolmsonii). In 2003, these three species accounted for all farmed freshwater prawns, about two thirds M. rosenbergii and one third M. nipponense. There are about 200 species in the genus Macrobrachium. They occur throughout the tropics and subtropics on all continents except Europe. Giant river prawns live in turbid freshwater, but their larval stages require brackish water to survive. Males can reach a body size of 32 cm;females grow to 25 cm. In mating, the male deposits spermatophores on the underside of the female’s thorax, between the walking legs. High Protein Recipe Spicy Coconut Prawn STIR FRY SLIM & TRIM
Niki’s Spicy Coconut Prawn Stir Fry Recipe
Serves 8-10 Prep 10 mins CookingTime 10 mins
2tbs olive oil
1kg frozen raw green prawns, peeled, deveined,without tails (thawed)
400g cauliflower, cut into florets
200g broccoli, cut into florets
1 large brown onion, finely sliced
2 large cloves of garlic, finely sliced
2 long red chillies, finely sliced
1 tsp ground turmeric
2 tsp yellow mustard seeds
1/4 tsp ground cardamon
1/2 tsp ground cumin
270ml can coconut milk
4tbs mango chutney
Heat oil in a wok on a medium/high heat and add onion, garlic, chillies and spices, mixing well and just till flavors of spices are released and onion softens. Now add the prawns and combine well, continually stirring for about 2 minutes. Next add the cauliflower and broccoli mixing very well, stirring again for another 2 minutes. Last add the mango chutney and coconut milk, mix well and cover for a couple of minutes on a slightly lower heat to finish cooking. The vegetables should be just cooked, not tender.
We buy frozen prawns that are already prepared. Allow more prep time if you can’t find prepared prawns. If you don’t like prawns you can use chicken or pork instead. Remove chilli seeds to make a milder version of this recipe.

In this video I talk about the shrimp that we serve at the bistro. I talk about the difference between farmed Asian shrimp and wild caught gulf shrimp. We serve a shrimp called the right choice shrimp from Ecuador. The shrimp is farm raised in low density environment without the use of hormones, antibiotics and packed chemical free. There is also no habitat structures that is associated with wild caught shrimp. And of course there are no by catch issues which are a huge problem with wild caught shrimp.
