Recipe for: Chinese Fried Shrimp Balls

Ingredients:
500g Raw Prawns
2 Spring Onions
1 Tbsp Cornflour
1 Egg White
½ Tsp Sesame Oil
1 Tbsp Oil
1 Tsp Ground White Pepper
80 to 100 Sheets Wonton Skins
Salt to Taste

Method:
1. Finely chop the prawns very finely and place into a mixing bowl.
2. Finely chop the spring onions and place in the bowl with the prawns.
3. Add the white pepper & the egg white.
4. Add the salt and cornflour, then mix the ingredients to form a paste.
5. Slice the wonton skins into thin strips.
6. Place the wonton skins in a bowl and toss to separate.
7. Take 1 Tbsp of the prawn paste and roll it over the bed of wonton skins.
8. Make sure the prawn balls are evenly coated with wonton skins.
9. Heat 1 litre of oil in the wok.
10. Place the prawn balls in the hot oil one at a time.
11. Deep fry until they turn golden brown. Do this is batches.
12. Remove from oil and drain.
13. Transfer onto a dish, garnish and serve with sweet chilli sauce.

Recipe for: Stir Fry Prawns & Cabbage

The sweetness of the prawns, the spiciness of the green peppercorn and chillies, and the crunchiness of the Chinese cabbage. what a flirtation!

Ingredients:
1 Large Cabbage
500g Raw Prawns
4 Cloves Garlic
2 Slices Ginger
1 Tsp Green Peppercorns
3 Red Chilli Peppers
2 Green Chilli Peppers
Salt to Taste

Method:
1. Cut the cabbage into bite sized pieces
2. Chop the garlic
3. Chop the ginger
4. De-seed the peppers, then roughly chop
5. Heat 1 tablespoon of oil in the wok
6. Add in the prawns
7. Fry till they turn pink
8. Remove from heat & place on a dish for later
9. Place the cabbage in the same wok
10. Fry for a minute then remove
11. Heat 1 tablespoon of oil
12. Add the peppercorns
13. Fry for few seconds
14. Add the garlic, ginger & chilli peppers
15. Fry for few seconds
16. Add the prawns
17. Stir the ingredients
18. Add the cabbage
19. Stir fry for half a minute
20. Add salt to your taste
21. Stir for a minute
22. Transfer onto a dish
23. & serve

Recipe for: Chinese Mango Prawns

Ingredients:
200g Raw Prawns
1 Mango
2 Cloves Garlic
1 Tsp Paprika
Small Bunch Fresh Coriander (20g)
1 Green Chilli Pepper
Salt to Taste

Method:
1. Finely chop the garlic.
2. Thinly slice the green chilli.
3. Roughly chop the coriander.
4. Peel and cut the mango into bite size pieces.
5. Place garlic into 2 Tbsp of hot olive oil and fry for few seconds.
6. Add mango and paprika into the pan and fry for a minute.
7. Add the chilli pepper, prawns and salt.
8. Fry for 2 to 4 minutes until the prawns are cooked.
9. Stir in the coriander.
10. Then transfer onto a dish and serve.
