Learn how to make Bengali Style ‘Chingri Malaikari’ or ‘Chingri Malai Curry’ with our chef Varun Inamdar.

Chingri Malai Curry Recipe or Prawn Malai Curry Recipe is a Bengali prawn curry, where prawns are cooked in spices and coconut milk making a thick curry dish. It is served with rice for an authentic Bengali meal.

(Serves 3)
- 4-5 Ginat Freshwater Prawns
- Turmeric Powder
- Salt
- 2-3 Onions
- 4 tbsp Oil
- 1 tbsp Ghee
- 2-3 Cloves
- 2-3 Green Cardamom
- 1 inch Cinnamon Stick
- 2 Bay Leaves
- 2 Dried Red Chillies
- 1/2 tsp Red Chilli Powder
- 1 tsp Turmeric Powder
- 1 tbsp Sugar
- 2-3 Green Chillies
- 1/4 cup Curds
- 1/2 cup Coconut Milk(thick)
- 1/2 cup Coconut Milk(thin)
- Salt
- 1/2 tsp Garam Masala

1. Take giant freshwater prawns and add turmeric powder, salt
2. Keep the prawns aside and in a mixer bowl, add onions and ground it
3. Once grounded, keep it aside and heat a pan
4. Add oil to the pan and let it heat
5. Now, add prawns to the pan and let it fry on each side for 30 seconds
6. After this, Remove the prawns in a bowl, and in the same pan add ghee
7. let it melt and, add in cloves, green cardamom, cinnamon stick, bay leaves, dried red chillies and mix
8. Now add in the onion paste to the pan, which was kept aside
9. Once the onion starts to cook, add in red chilli powder, turmeric powder, sugar, green chillies, curd
10. Now, let it cook on a low flame till the oil starts releasing
11. After this, add coconut milk to the pan
12. Now, turn the flame to high and let it cook
13. Add in the fried prawns to the curry and swirl the pan
14. Now, add thin coconut milk to the pan along with some salt
15. Allow the chingri malaikari to cook over a low flame, till the prawns are completely cooked
16. Add garam masala from the top; turn off the flame and serve it

Mustard Oil 2 tbsp\r
Chopped Tomato 1\r
Chopped Onion 2 big size\r
Ginger Garlic paste 1 tsp\r
Chopped Green Chili 1\r
Chopped Coriander leaves 1 tbsp\r
Ghee ½ tsp\r
Sugar little\r
Turmeric powder little\r
Chili powder 1 tsp\r
Fried onion, take 2 onions\r
Cumin 1 tsp\r
Yogurt 3 tbsp\r
Salt to taste\r

চিংড়ী মালাইকারি রেসিপি

গরম গরম এক প্লেট ভাত আর তার সাথে যদি থাকে চিংড়ি মালাইকারী তাহলে আর কি চাই বলেন। আজ আপনাদের জন্য ‍খুবই সুস্বাদু চিংড়ি মালাইকারি রেসিপি নিয়ে এসেছি। আশা করছি আপনাদের কাছে ভাল লাগবে।

উপকরণ :

১। গলদা চিংড়ি ২৫০ গ্রাম।
২। হলুদ ১/২ চা চামচ।
৩। লবন স্বাদমত।
৪। সরিষার তেল ১/৪ কাপ।
৫। পিয়াজকুচি ১ কাপ।
৬। তেজপাতা ১ টি।
৭। দারচিনি ১ টুকরা
৮। এলাচ ২টি।
৯। পানি ২ টেবিল চামচ।
১০। মরিচ গুড়া ১+১/২ চা চামচ
১১। ধনে গুড়া ১ চা চামচ।
১২। রসুন বাটা ১ চা চামচ
১৩। আদা বাটা ১ চা চামচ
১৪। ভাজা জিরা গুড়া ১ চা চামচ
১৫। কাচা মরিচ ৪টি।
১৬। নারিকেল দুধ ১/২ কাপ

1. Prawn Fish 250 g
2. Turmeric powder 1/2 teaspoon.
3. Salt to taste
4. Mustard oil 1/4 cup
5. Onion Slice 1 cup
6. Bayleaf 1
7. 1 piece of cinnamon
8. 2 Cardamon
9. Two tablespoons of water
10. Red Chilli powder 1 + 1/2 teaspoon
11. 1 teaspoon of coriander powder.
12. 1 teaspoon of garlic paste
13. Ginger paste 1 teaspoon
14. Fry grilled cumin 1 teaspoon
15. Green Chilli 4.
16. Coconut milk 1/2 cup

How to make Chingri Macher Paturi\r
Chingrir Paturi is a delectable and authentic Bengali dish where the prawns steeped in flavorful spices, wrapped in fresh banana leaves and steam or cooked in a pan. Easy and quick to make for lunch or dinner. It is popular in Bangladesh and West Bengal.\r
Prawns (Chingri) – 7 to 8 medium size\r
Yellow mustard seeds – 1 tsp (Soaked in Water)\r
Black mustard seeds – 1 tsp (Soaked in Water)\r
Poppy seeds – 1 tsp (Soaked in Water)\r
Coconut – 1 tbsp (Bland)\r
Green chillies – 4 pieces \r
Mustard oil – 2 tbsp \r
Salt to taste\r
Sugar – 1/2 tsp\r
Banana leaves cut into large rectangular pieces\r

500 gms. Large prawns
1 medium onion, ground to a paste
3 pods of garlic, chopped
1 tsp. Ginger paste
10 green chillies, finely chopped
1 tsp. Sugar
2 cups of coconut milk
4 Bay leaves
4 Green cardamoms
4 Cloves
1” Cinnamon
2 tsp. Chilli powder
1 tsp. Turmeric powder
Salt, to taste
3 tbsp. Mustard oil

1. Marinate the prawns with salt and turmeric powder for 30 minutes and fry them golden.
2. In the same oil add the garlic and when the flavour is consumed by the oil remove the garlic and add the bay leaves.
3. Add the cardamom, cloves and the cinnamon and add the bay leaves.
4. Add the onion and the sugar and sauté till the oil separates.
5. Add the ginger paste and cook.
6. Add the coconut milk and 1 cup of water and stir continuously.
7. Add the chilli powder, salt and stir continuously.
8. When the gravy boils add the prawns and cook on a low flame till the curry turns creamy.
9. Serve with steamed rice.

Prawns Malai Curry is ready to eat!
