Ingredients for the masala:
1 tbsp Coriander seeds
1 tsp Cumin seeds
6 Garlic Cloves
Cherry-sized Tamarind
10 Dry Red Chillies
1/2 Fresh Coconut, grated
1/2 tsp Turmeric powder
Water as required

Ingredients for Curry:
4 tbsp Coconut Oil
1 Large Onion, finely chopped
1 Inch Ginger, finely chopped
1 Tomato, finely chopped
Masala
1/2 litre Water
1 Cup Coconut Milk
10-12 Curry leaves
1/2 kg Prawns, deveined & shelled
Salt

Method for masala:
In a mixer jar add coriander seeds, cumin seeds, garlic cloves, tamarind, red chilies, coconut, turmeric powder, water, grind it to a nice fine paste and our Masala is ready.

Method for Curry:
In a vessel heat oil, add onion, ginger, saute them till the onions are pink and soft.
Add tomato, saute them till they are nice and mushy.
Add the ground masala and saute till it changes color.
Add water, coconut milk, curry leaves, prawns, salt and cook it for 4-5 minutes.
Switch off the flame and plate the dish.
Our Prawn Ambotik is ready to be served.

This is goan prawn rice.In konkani it is call sungtache rice (सुंगटाचे राईस).

3-4 servings.

Ingredients:

For marination of prawns:

1 small bowl prawns

1 tsp turmeric powder

1 tsp ginger-garlic paste

Half tsp salt

half lemon juice

1 cup rice

1-2 bay leaves

4 green cardamom

2 anise

4-5 cloves

1-2 cinnamon

1 black cardamom

4-5 black pepper

2 finely chopped onion

2 finely chopped tomatoes

1 small bowl freshly grated coconut

1 tbsp red chilli powder

2 tbsps garam masala(blend of spices)

1 tsp turmeric powder

Few chopped fresh coriander

2 small onion cut for fried onion

Half small bowl oil

Salt to taste

Recipe:

1)First shell,devein prawns and clean in water,then marinate it with turmeric powder,ginger-garlic paste,salt,lemon juice.

2) Soak rice in enough water for 10-15 mins and chop fresh coriander and cut 2 small onion and fry them until it becomes golden brown.

3)Grind freshly grated coconut in mixture grinder without water for fineness.

4) Add oil in casserole,then after oil get hot on medium heat add bay leaves,green cardamom,black cardamom,2 anise,cloves,cinnamon,black pepper and saute it.

5) Now add finely chopped onion,add finely chopped tomatoes and mix well,then add marinated prawns and cook it for 5 mins.

6) Add red chilli powder,garam masala.turmeric powder and mix well,then add rice,then add 2 cup of water,then add salt as per taste and cover it with lid for 5-10 mins.

7) After that add ground freshly grated coconut and mix well and cover it with lid again for 5 mins.

9) Now spread fried onion and fresh coriander all over rice.

10) Keep casserole on tawa and cover with lid for 5 mins to bloom,but make sure that water should be completely dry up from rice before keeping on tawa.

11) Now mix rice.

12) Serve with curd(Add little bit of red chilli powder,salt and sugar in curd to enhance flavour).

This is goan prawn curry made in coconut milk.In konkani it is call ‘Sungtache Hooman’(सुंगटाचे हूमण).

4 servings.

Ingredients:

For masala:

1 small bowl freshly grated coconut

5 dry red chillies

1 tsp rice flour

2 tbsps coriander seeds

Salt as per taste

1 tsp turmeric powder

Water as per needed

1 small bowl prawns

1 finely chopped onion

2 green chillies vertically cut into 2 part
6 kokum(garcinia indica)

1 cup coconut milk

2 tbsps coconut oil

Recipe:

1)Shell,devein prawns and clean in water.

2) First for masala take freshly grated coconut,dry red chillies,rice flour,coriander seeds,turmeric powder,salt as per taste, grind all this in mixture grinder,add water if needed.

3) Now take kadhai add coconut oil,after oil get hot on medium heat add chopped onion,saute until it becomes slightly golden brown in color.

4) Add green chillies,saute it for 2 mins,then add prawns and cook for 5 mins.

5) After that add ground masala,mix well and cover it with lid for 5 mins keeping little gap to cook.

6) Now add coconut milk ,stir it and add salt as per taste and kokum,add water if you want curry in more liquid form.

7) Now again cover it with lid for 5-7 mins keeping little gap and let it come to boil.

250 gms prawns (medium)
30 no red chillies
1 tbsp jeera/ cumin
100 grams garlic cloves
3 tbsp oil
100 ml white vinegar

Method
- In bowl add red chillies, garlic, cumin, white vinegar, salt and give it a light stir keep it aside for 15-20 minutes

- Run the mixture into the grinder
