Curry /ˈkʌri/, plural curries, is the generic English term primarily employed in Western culture to denote a wide variety of dishes whose origins are Southern and Southeastern Asian cuisines, as well as New World cuisines influenced by them such as Trinidadian, Mauritian or Fijian. Their common feature is the incorporation of complex combinations of spices and/or herbs, usually including fresh or dried hot chillies. In original traditional cuisines, the precise selection of spices for each dish is a matter of national or regional cultural tradition, religious price, and, to some extent, family preference. Such dishes are called by specific names that refer to their ingredients, spicing, and cooking methods. ., spices are used both whole and ground; cooked or raw; and they may be added at different times during the cooking process to produce different results. Curry powder, prepared mixture of spices, is largely a Western notion, dating to the 18th century. Such mixtures are commonly thought to have first been prepared by Indian merchants for sale to members of the British Colonial government and army returning to Britain. Dishes called curry may contain meat, poultry, fish, or shellfish, either alone or in combination with vegetables. They may instead be entirely vegetarian, especially among those for whom there are religious proscriptions against eating meat or seafood.Curries may be either wet or dry. Wet curries contain significant amounts of sauce or gravy based on yoghurt, coconut milk, legume purée (dal), or stock. Dry curries are cooked with very little liquid which is allowed to evaporate, leaving the other ingredients coated with the spice mixture. The main spices found in most South Asian curry powders are turmeric, coriander, and cumin; a wide range of additional spices may be included depending on the geographic region and the foods being included (white/red meat, fish, lentils, rice and vegetables). Curry was adopted and anglicised from the Tamil word kari (கறி) meaning sauce, which is usually understood to mean vegetables and/or meat cooked with spices with or without a gravy. According to this theory, was first encountered in the mid-17th century by members of the British East India Company trading with Tamil (Indian) merchants along the Coromandel Coast of southeast India, particularly at Fort St. George (later called Madras and renamed Chennai in 1996). Here, they became familiar with a spice blend used for making kari dishes . called kari podi or curry powder.. A further explanation put forward in The Flavours of History claims the origins of the word curry to be from old English first recorded in The Forme of Cury (1390). The first edition of her book used only black pepper and coriander seeds for seasoning of currey. By the fourth edition of the book, other ingredients such as turmeric and were called for. The use of hot spices was not mentioned, which reflected the limited use of chili in India — chili plants had only been introduced into India around the late 15th century and at that time were only popular in southern India.\r

1 Cup Prawns
1/2 Cup Coriander Leaves
10-12 Garlic Cloves
1 Small Piece of Ginger
1 tbsp Mix Masala
1/2 Lemon Juice
2 tbsp Semolina
Oil for frying
- In a mixer grinder add coriander leaves, garlic, ginger & little water. Grind everything to a smooth paste. Masala paste for prawns is ready.
- In a flat bowl add prawns, mix masala, salt, masala paste & lemon juice. Coat the prawns with all the spices.
- Heat some oil for shallow frying.
- One by one coat the prawns in semolina and shallow fry them in medium hot oil.
- Fry them on both sides on golden brown color.
- Remove them from a plate & serve hot.

12 prawns shelled, keeping the head and the tail intact and legs trimmed
2 tsp. Kashmiri chilli powder
2 tsp. Pathare Prabhu sambar masala
½ tsp. turmeric powder
1 ½ tbsp. Garlic paste
5 tbsp. Oil
A pinch of asafoetida
Salt to taste
For The Pathare Prabhu Sambar Masala
2 tbsp. Wheat
2 tbsp. Split Bengal gram
1 tsp. Turmeric powder
½ tsp. Fenugreek seeds
A pinch of asafoetida
1 tsp. black peppercorns
20 Kashmiri dry red chillies
8 tbsp. coriander seeds
1½ tbsp. Cumin seeds
1½ tbsp. mustard seeds
1. In a flat bottom pan, heat oil and add the asafoetida and garlic. Sauté garlic until the raw smell goes off but see to it that the colour of the garlic does not change.
2. Add salt, chilli powder, turmeric powder and the sambar powder and mix well.
3. Add the prawns and sauté gently and coat the prawns with the masala.
4. Add 4 tbsp of water and cover and steam the prawns for 4 minutes.
5. Once you add the water you shouldn’t stir the curry. Hold the vessel on both the sides and gently coat the prawns with the sauce.
6. Serve this hot with rice and dal.
The Pathare Prabhu Sambar Masala:-
1. Dry roast all the ingredients one at a time except the turmeric and the asafoetida.
2. Cool the ingredients and then add the turmeric and the asafoetida and blend in the mixer to a fine powder.
3. Store in an air tight container and use as required.

Marinate the Prawns
Add, chilly powder
salt 3 tablespoon ginger garlic paste
Preparing Prawn Biryani
Oil as it needed
2 cups of Basmati rice 300 grams
A cup of chopped onions
A cup of sliced tomatoes
6 green chili
Salt as per needed
Cup of Curd
Add 300 grams of Basmati rice, in a large bowl
As water as it needed
Soak in the water for 15 minutes.
Add oil in the hot pan
Add Fennel Seeds
Fry onions until brown.
Onion turned into brown.
Now… Add tomatoes
Add 1 tablespoon of salt
Cook tomatoes till it turns smashing
Now it’s time to add marinate prawns
Mix it well and cook for 2 minutes
Now.. add the rice
Water ration is 1: 1
For 1 cup of rice add 1 cup of water
Leave for 2 minutes till water boil
Add the mint leaves
Add Ghee as per your taste
Close the lid and cook about for 15 minutes
Switch off the flame after 15 minutes
And, allow prawn biryani to rest for 15 minutes
Now… open the lid and mix everything
The delicious prawn biryani is ready to serve
